Grilled Lamb Chops
Lamb is elevated when grilled by accentuating the balance of pastoral fatty flavors and rich meaty flavors. Season simply with salt and pepper, but serve alongside a lemony salsa verde or spicy chimichurri sauce.
Ingredients
- 1 rack of lamb
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
Preparation
- Remove lamb rack from package and pat dry with a paper towel
- Some folks like to French their lamb racks
- Season lamb generously with salt and pepper and rest in refrigerator for at least one hour and up to 24 hours
- Preheat Cuisinart grill on high for 5 minutes
- Turn grill to low heat and place lamb rack on grill, bone side facing up, and grill with lid closed for 5 minutes
- Turn lamb rack over for an additional 5 minutes or until internal temperature of 145ºF
- Rest lamb for 5-8 minutes prior to carving
- To carve, hold bone and slice with knife along the bone in a downward motion
- Serve with your favorite sauce
