Broiled Nachos
Broiled Nachos
Broiling these nachos creates the ultimate melted cheesy crust.
Ingredients
Pico de Gallo:
- 1 cup fresh Roma tomatoes (approximately 3 tomatoes), diced
- 1/2 cup fresh cilantro and parsley chopped
- 1 teaspoon lime juice
- 1 tablespoon extra-virgin olive oil
- 1 clove garlic, minced
- 1/4 cup scallion, minced
- 1 yeaspoon kosher salt
- 2 tablespoon avocado oil
- 1 green pepper, diced
- 1 red pepper, diced
- 1 small onion, diced
- 1-pound ground beef
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 can black beans, rinsed and drained
- 1 cup pickled jalapeno slices
- 1 bag tortilla chips
- 8 ounces shredded cheddar cheese
- 8 ounces shredded pepper jack cheese
Garnish (optional):
- 1/4 cup cilantro, chopped
- 1/4 cup jalapeno slices, drained
- 1/4 cup black olives slices, drained
- 1 each avocado, stone removed and sliced into wedges
- 1/4 cup sour cream
Preparation
- Combine all ingredients for Pico de Gallo and refridgerate at least 3 hours.
- Preheat Griddler on medium heat for 5 minutes
- Set broiler rack on bottom shelf
- Drizzle avocado oil on griddle top and using a flat spatula, spread evenly across the griddle top.
- When oil begins to smoke, place peppers and onions on one-third of the griddle, ground beef on one-third, and beans on the last third of the griddle
- Season vegetables, meat and beans with salt, pepper, cumin, and chili powder.
- Once meat is seared, flip ground beef and flatten with spatula.
- When meat is cooked through, use spatula to break up into approximately 1-inch pieces
- Combine, cooked vegetables, meat and beans
- Remove food from griddle top and clean top
- Using a large heat-safe platter or skillet, layer bottom of platter with tortilla chips
- Combine cheddar and pepper jack in medium bowl and spread over first later or tortillas until lightly covered.
- Cover with beef and vegetable mixture
- Start second layer of tortilla chips
- Repeat layering cheese and beef mixture
- Start third layer of tortilla chips an inch from second layer (should be mostly in center of pan).
- Top with remaining beef and cheese on top.
- Place nachos on preheated rack in broiler until cheese is melted and bubbling. Tortilla chip edges should be slightly browned as well. Turn after 30 seconds. Nachos will be done in approximately 1-2 minutes.
- Garnish with fresh pico de gallo and desired options. The more the better!
