Spice-Crusted Ham with Mustard Glaze
Makes 8 to 10 servings
Ingredients
1 tablespoon paprika
1 tablespoon onion powder
1½ teaspoons chili powder
½ teaspoon ground ginger
¼ teaspoon ground cloves
2 tablespoons plus ¼ cup light brown sugar, divided
1 8- to 10-pound bone-in ham
½ cup whole-grain mustard
¼ cup honey
Preparation
1. Mix the spices and 2 tablespoons of the brown sugar together in a bowl.
2. Thoroughly rinse the ham and then pat dry.
3. Coat the ham in the spice mixture. Place on a baking pan, and then allow to sit for 30 minutes. Meanwhile, place a rack in the lower position of the oven, and then heat the oven to 325°F.
4. Wrap the ham with aluminum foil. Place the pan on the lower rack. Bake for 2 hours.
5. While the ham is baking, stir together the mustard, honey, and remaining ¼ cup brown sugar in a small bowl. Reserve the glaze.
6. Remove the ham from the oven, and carefully remove the foil. Brush the glaze all over the ham. Place the ham back in the oven uncovered. Bake at 325°F for an additional 10 minutes.
7. Remove the ham from the oven. Allow the ham to rest for about 10 minutes before slicing and serving.
