Seared Steak

Makes 2 to 3 servings

Ingredients

  • 1 1½-inch-thick strip steak, about 1 pound
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 3 sprigs fresh thyme
  • 1 teaspoon olive oil
  • Sea salt flakes to finish
     

Preparation

  1. Season the steak all over with the salt and pepper, and then rub with the thyme. Leave at room temperature for about 30 minutes before preheating the pan.
  2. Put the olive oil into the 10-inch skillet and set over medium-high heat for 3 to 4 minutes. Once the oil is hot and shimmers across the pan, add the steak and cook, undisturbed, for 6 minutes. Flip and sear the opposite side, cooking undisturbed for another 5 minutes. Using a pair of tongs, hold the edges of the steak to the pan for about 1 minute on each side. The total cooking time should be 14 to 15 minutes for medium rare.
  3. Remove and reserve for 5 minutes before slicing. Sprinkle the sliced steak lightly with the sea salt and then serve.
