Asian Pulled Pork Sandwiches

Ingredients

  • 3 pounds boneless pork butt, cut into 2-inch chunks
  • 1 cup water
  • ¾ cup Japanese barbecue sauce, plus more for serving
  • 1 cup slaw mix
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 4 brioche buns or Hawaiian sweet rolls, toasted if desired
  • 4 tablespoons fresh cilantro leaves

Preparation

  1. Add the pork, water, and barbecue sauce to the multicooker cooking pot. Stir to coat the pork evenly. Secure the lid and select Meat. Set the pressure to High+ and the time for 1 hour 15 minutes, and then press Start.
  2. When the tone sounds, let pressure release naturally.
  3. While pressure is releasing, add the slaw mix to a medium bowl. Toss with the oil, salt, and pepper until well combined.
  4. Once the pressure is completely released, carefully open the lid and transfer the pork to a large mixing bowl; shred with 2 forks or your hands (gloves are recommended). Taste and adjust seasoning as desired.
  5. Divide pulled pork among the 4 buns and top with additional barbecue sauce if desired. Top with the slaw and cilantro leaves, then serve.
