Mixed Berry Ice Cream

Best made when berries are at their peak of freshness, this ice cream is light, sweet, and fruity.

Ingredients

  • ½ cup fresh berries (a mixture of raspberries, blackberries, and blueberries works well)
  • ¼ cup whole milk
  • ¼ cup granulated sugar
  • Pinch salt
  • ½ cup heavy cream
  • ½ teaspoon pure vanilla extract

Preparation

  1. Put the berries into the work bowl of a food processor fitted with the chopping blade. Pulse until finely chopped. Reserve in the work bowl.
  2. Put the milk, sugar, and salt in a small mixing bowl. Mix, using a hand mixer on low speed or a whisk, until the sugar is dissolved.
  3. Stir in the heavy cream and vanilla.
  4. Stir in the reserved berries and their juices.
  5. Cover and refrigerate at least 2 hours, preferably overnight.
  6. Turn on the Cuisinart® ice cream maker. Whisk the ice cream base, and then pour the mixture into the freezer bowl through the ingredient funnel.
  7. Churn until thickened, 15 to 20 minutes.
  8. The ice cream will have a soft, creamy texture. For a firmer consistency, transfer the ice cream to an airtight container and place in the freezer for about 2 hours.
  9. Remove from the freezer about 15 minutes before serving.

* Frozen thawed mixed berries may be substituted if fresh are not available.
