Ingredients
⅔ cup powdered sugar 6 tablespoons unsweetened cocoa (preferably Dutch process) 1 cup all-purpose flour 1 teaspoon baking powder ⅛ teaspoon salt 1 cup granulated sugar 6 tablespoons unsalted butter, melted 2 large eggs 1 teaspoon vanilla extract ½ teaspoon almond extract ½ cup mini chocolate morsels ½ cup dried tart cherries
Preparation
In a small bowl, using a Cuisinart SmartPower ™ CountUp™ 9-Speed Hand Mixer, mix powdered sugar on Speed 1 for 15 - 20 seconds, to remove lumps, reserve. In another small bowl, beat cocoa on Speed 1 for 15 - 20 seconds to remove lumps. In a third bowl, beat the flour, baking powder and salt on Speed 1 for 10 seconds to blend, reserve. In a medium bowl, combine the granulated sugar and butter on Speed 2 until smooth, 30 seconds. Add the eggs, one at a time, beating for 10 seconds after each egg is added. Mix in cocoa and vanilla on Speed 1. Beat until smooth and creamy on Speed 2, 30 seconds. Add the flour mixture and mix on Speed 1 until combined, 30 seconds. Mix on Speed 3 for 1 minute until thick and creamy. Add chocolate morsels and cherries, using Speed 1 until just blended, 15 - 20 seconds. Preheat oven to 350°F. Line baking sheets with parchment or nonstick baking liners. Shape dough into 1- inch balls, coat generously in powdered sugar, arrange on baking sheets 1 - inch apart. Bake for about 12 minutes until tops appear crackled. Cool on sheets 2 minutes, then transfer to racks to cool completely.
