Orange Spice Coffee Cakes

Makes 12 mini Bundt cakes

The fresh orange zest and juice shine through in these moist breakfast coffee cakes.

Ingredients

  • Unsalted butter, softened, for the pan

Topping:

  • ¼ cup toasted walnuts, chopped
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon grated orange zest
  • Pinch kosher salt

Cake:

  • 1 cup unbleached all-purpose flour
  • ¼ teaspoon baking powder
  • ⅛ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon kosher salt
  • Pinch ground cloves
  • Pinch ground nutmeg
  • 4 tablespoons (½ stick) unsalted butter, cut into 4 pieces, room temperature
  • ¼ cup granulated sugar
  • 2 tablespoons packed light brown sugar
  • 1 tablespoon grated orange zest
  • 1 large egg, room temperature
  • ½ teaspoon pure vanilla extract
  • ⅓ cup plain Greek yogurt, preferably full fat
  • ¼ cup fresh orange juice (juice the orange used for the zest)

Preparation

  1. Coat the inside cups of the mini Bundt pan with softened butter; reserve. Preheat the oven to 350°F with the rack in the middle position.
  2. Put the filling ingredients into a small mixing bowl. Using either a whisk, a fork, or your fingers, mix until well combined; reserve.
  3. To make the cake batter, put the flour, spices, salt, baking powder, and baking soda into a medium mixing bowl. Whisk to combine thoroughly; reserve.
  4. Put the butter, sugars, and zest into a large mixing bowl or the bowl of a stand mixer. Using either a hand mixer fitted with beater attachments or using the paddle of the stand mixer, mix until light and creamy. Gradually add the egg, and then the yogurt, juice, and vanilla. Add the dry ingredients in two additions, mixing gently but thoroughly.
  5. Divide the batter among the 12 cups in the prepared baking pan. Top each with about 1 teaspoon of the topping. Use a toothpick to gently swirl into the batter. 
  6. Transfer the pan to the oven. Bake for about 18 minutes, or until the tops of the cakes spring back to the touch.
  7. Cool completely and then remove from the pan prior to serving.
