They reverse the patented SmartPower blade. Chop runs the sharp edge for soft, delicate foods like herbs, celery, onions, garlic and most cheeses, and for pureeing and emulsifying. Grind runs the blunt edge for spices, peppercorns, seeds, chocolate and nuts.
Cut ingredients to a uniform half-inch to inch and fill the bowl about two-thirds full. Use short one-second pulses and scrape the sides between them if needed. Pulsing is what gives you control, from a coarse chop all the way to a smooth puree.
Pour it through one of the openings in the cover while the blade is running. Use one at a time and leave the other free so air can escape. For mayonnaise, run on Chop and add the oil slowly until it is fully emulsified.
