Braised Leeks

My Mum was the best."


1 tsp olive oil
1 large red onion (sliced)
4 leeks (sliced in quarters lengthwise)
2 tsp butter
3/4 cup water
1/8 tsp salt
fresh ground black pepper (to taste)


Preheat the oven to 300°F. Place the olive oil in a large ovenproof skillet over medium heat. Add the onions and cook for about one minute. Add the leeks and cook for about 2 minutes. Add the butter, water, salt and pepper. Stir and cover.

Place the pan in the oven. Cook for about 20 minutes, until the leeks are slightly tender. Great with Hollandaise Sauce.
