Fruity Cocktail Meatballs

" Savory, tender meatballs in a finger licking sweet gravy"

Ground beef 90% lean
caramelized onions/shallots
fresh challah bread or similar
light cream
spices- garlic powder, fresh ground pepper, salt, paprika, sugar, fresh parsley, onion powder
1 egg
1 or 2 jar(s) of any jelly/ preserves
brown sugar
corn oil for cooking
chicken stock or beef preferably homemade
pineapple chunks, maraschino cherries or lychee nuts (anything works)

Caramelize small diced onion and or shallots. Put aside till cool
Mix meat, spices to taste, egg in a bowl.
Mix onions/ shallots, chopped parsley, into meat mixture
Add challah bread diced small and soaked in cream till soft, to meat mixture
Blend well without bruising the meat
Taste a small bit to adjust saltiness/spices
Pan fry in corn oil careful to not break the balls. Mixture will be kinda wet so adjust moisture so not overly soft. Brown on all sides till firm and cooked. Drain off oil. Put balls aside. In pot, add butter, preserves(jelly), chicken stock, brown/white sugar and slowly bring to boil and thicken. Add meatballs and fruit pieces and stir gently. Serve right away or bake for 30 minutes at 350° to absorb sauces/flavors. Also thickens more. Serve and watch your friends and family lick their plates clean! Feel free to play around with different flavors/ fruits/ sweeteners/ meats..serve by themselves or over rice or noodles. Enjoy! Enjoy
