Potato Soup


1 stick butter
1/2 c chopped onions
1/2 c minced celery
4 cups small chopped red potatoes
2 c milk
2 c half and half
1 8 oz pkg cream cheese
2 TBS parsley
1/4 tsp Thyme


Saute celery, onion in butter until tender stir in 2 TBS flour stirring slowly add 2 c milk to blend, add remaining half and half and softened cream cheese, potatoes,spices and salt and pepper to taste. Cook on low until potatoes are tender. You may add grated cheddar cheese on top when served
