Chicken Tortilla Soup

Chicken Soup with Crispy Tortilla Strips & Chipotle Sour Cream

2 cans white meat chicken
2 cans black beans
2 cups frozen or canned corn
1 small can diced green chili's
1 can Rotel or generic)
1 medium dice onion
2 cups low sodium chicken broth (add more if needed)
1 or 2 cloves of Garlic, minced
Salt and Pepper to taste
Corn tortillas, cut in strips and fried or baked until crisp (you can use tortilla chips as a substitute)
sour cream for garnish


Add all ingredients, except tortilla strips and sour cream, to soup pot. Bring to boil then simmer for 30 minutes to an hour so that flavors blend. Serve with tortilla strips or chips and a spoonful of sour cream on top
