Cake Brownies


1/2 lb (2 sticks) unsalted butter – room temperature

2 cups sugar

4 large eggs

1/2 tsp. baking powder

1/2 tsp. salt

2 tsp vanilla extract

3/4 cup cocoa powder

1 cup all-purpose flour


Preheat oven to 350 degrees, and prepare a 9 X 13 pan with release spray or butter and flour. Set aside.

In the bowl of an electric mixer combine butter and sugar, mix until creamy. Add eggs one at a time until well combined. Add baking powder, salt and vanilla extract, beating to combine well.

In a separate bowl mix cocoa powder and flour, stirring well to combine. Add to creamed mixture and mix on low until incorporated. Pour batter into prepared pan and bake for 25-30 minutes depending on your oven – a toothpick will come out clean. Remove from oven and set pan on a wire rack to cool for at least 1 hour.
