Wholesome comfort food for cold days & nights of winter. Serve with piece of homemade cornbread.
1 & 1/2 cups dried white beans
¼ # ham, chopped
1 T. olive oil
1 medium onion, diced
½ # cooked meat (sausage choice , rotisserie chicken, or leftover turkey, shredded
1 1/3 cups canned mustard greens , rinsed & chopped
2 medium baking potatoes

Cover beans and let soak overnight, or do quick soak per directions on package. Rinse and cover with 2 qts. fresh water in Dutch oven pot, and cook with ham until tender. (1 ½-2 hours). When beans are done, heat olive oil in separate skillet and cook onion until transparent. Add cooked onions to the bean pot.
Remove membrane from sausage. Cut into ¼” pieces and add to beans. If using chicken or turkey, shred, then add to beans. Rinse mustard greens, chop and add to soup mixture. Peel and cut potatoes into ½” pieces and add to soup. Cook for 30 minutes or more until potatoes are tender. Serve hot.
