Healthy Pumpkin Soup

Creamy, spicy, sweet soup.




15 oz can pumpkin (not pie filling) 2 cups fat free chicken broth 1 cup unsweetened So Delicious coconut milk 1 Tbsp cumin 2 teaspoon curry powder 2 teaspoon coriander ¼ teaspoon red curry paste 1 Tbsp Splenda (optional) 1 teaspoon coconut extract 1 shallot

Dice shallot. Heat in bottom of stock pan until translucent. Add broth and pumpkin. Add spices and extract. Add curry paste. Simmer for 20 min. Add coconut milk and heat an additional 10 min. Purée. Enjoy.
