5-6 slices of (local) bacon
1 small (organic) onion, sliced
2-3 (organic) carrots, chopped
1 (organic) celery rib, chopped
4-5 (organic) potatoes, peeled and chopped
1 C (organic) vegetable / homemade broth
½ C (organic) sour cream
2 oz (organic) cheese, shredded
Salt (if desired, to taste)

Cook bacon in pan until crispy. Remove from pan.
Cook onion, carrots and celery in bacon fat until soft.
Add potatoes and vegetable broth to pan and cover.
Simmer until potatoes are soft.
Use an immersion blender (or a regular blender) to blend until smooth and creamy.
Add sour cream and cheese and stir until cheese is melted and sour cream is incorporated.
Serve with crumbled bacon and broccoli as a garnish.
