An easy, home made cream of tomato soup with out the fat from real cream, using a surprise ingredient!

Ingredients

2 TBS OLIVE OIL 1 CUP CHOPPED ONION 2 CLOVES MINCED GARLIC 1 BAY LEAF 2-28OZ CANS OF DICED TOMATOES IN JUICE 1 TBS BROWN SUGAR 3 SLICES OF WHITE BREAD WITH CRUSTS REMOVED AND TORN INTO CHUNKS 2 CUPS FAT FREE CHICKEN BROTH FRESH CHOPPED CHIVES OR DILL, OPTIONAL SALT AND PEPPER

IN A HEAVY BOTTOMED LARGE PAN, SAUTE TO CHOPPED ONION, GARLIC, AND BAY LEAF IN THE OLIVE OIL FOR 3-5 MINUTES.STIR IN THE DICED TOMATOES AND THEIR JUICE AND SUGAR, BRING TO THE BOIL AND SIMMER 5-8 MINUTES. ADD THE CHUNKS OF WHITE BREAD AND ALLOW TO SIT, OFF THE HEAT UNTIL THE BREAD IS ABSORBED AND STARTING TO FALL APART, APPROX. 5 MINUTES. REMOVE AND DISCARD THE BAY LEAF. USING A HAND HELD BLENDER, PUREE THE INGREDIENTS UNTIL SMOOTH AND CREAMY, 4-5 MINUTES. ADD THE CHICKEN STOCK, RETURN TO THE HEAT AND BRING TO A GENTLE BOIL, STIRRING CONSTANTLY. CORRECT THE SEASONINGS WITH SALT AND PEPPER. SERVE TOPPING WITH THE CHOPPED CHIVES OR DILL
