Delicious chicken and vegetable soup.
Can be low-carb.
I don't follow recipes so this is a guess
1 whole chicken cut up or chicken parts.
3 medium sweet potatoes
4 celery stalks
3 chayotes *2 medium Irish potatoes if you aren't doing low carb.
1 large onion
2 garlic cloves
2 sprigs of fresh thyme (dry if you don't have any)
Salt to taste
2 tablespoon of vegetable or canola oil
Also note add your favourite types of vegetables.

Season chicken, overnight is best.
Cut vegetables to the size you want
Add oil to pot and add half onion and garlic, let saute for 5 mins
Add chicken ,cover and let cook for a few mins
turn and cook for 5 more mins
Add water and thyme and bring to a boil.
Add vegetables according to how fast they cook and add remaining ingredients.
Add salt to taste as you are cooking
