Buffalo Chicken Crock Pot Chili

Ingredients

2½ pounds boneless, skinless chicken breasts, cut into 1 inch pieces 1 large onion, chopped 3-4 stalks celery, chopped 3-4 carrots, chopped 28 ounce can diced tomatoes, undrained 1 can of black beans, rinsed 1 can of kidney beans, rinsed 1 can of hominy 2 teaspoons chili powder ½ teaspoon salt ¼-½ cup buffalo wing sauce crumbled blue cheese

Instructions

Spray 5-6 quart slow cooker with cooking spray. Mix all ingredients except wing sauce and cheese. Cover, cook on low heat for 8-10 hours. I do not add the wing sauce to the whole pot because we have a spice-averse child, so I add to individual servings. Stir in buffalo wing sauce and sprinkle with blue cheese. Enjoy!
