INGREDIENTS
Olive oil to saute chopped onion and minced garlic. Vegetable of your choice. For this soup we will use one butternut squash, cut into 2" cubes. Vegetable stock, salt and pepper and herbs to your taste. With the butternut squash soup we will use thyme.
Instructions
Saute onion and garlic till soft, do not brown.
Add vegetable stock and bring to boil.
Add squash, cook till soft but not mushy.
Puree soup till creamy. Season with salt, pepper and thyme.
