Mushroom and Leek Soup

Delicious, nutritious soup."


olive oil or butter - 2 T
chopped onion 1/2 C
chopped garlic 2 cloves
chopped mushrooms 1 1/2 C
chopped leeks 1 1/2 C
chicken stock
pepper & salt to taste
hot pepper sauce to taste (optional)


Using Cuisinart Soup Maker, heat olive oil or butter on high, add onions and garlic and cook until soft, stirring regularly. Add remaining ingredients and cook on medium, stirring occasionally. Continue cooking until leeks and mushrooms are thoroughly cooked. Turn off heat and blend until desired consistency. Taste and adjust flavorings. (If a fuller bodied soup is wanted, add thin, broken vermicelli and cook until soft.)
