For winter weather - Barley soup hits the spot!

Healthy Barley Soup
INGREDIENTS
2 cups Barley
1 each Avocados diced
1 1/2 each Tomatoes diced
1/2 each Cucumber diced
1/2 each Zucchini diced
1/2 bunch Green onions chopped
1 tablespoons Parsley chopped
2 each Garlic cloves finely chopped
1/2 inch Fresh Ginger finely chopped
1/2 medium Red or green pepper chopped
1/2 tsp Cayenne
6 cups vegetable broth
16 oz chick peas
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp Worcestershire sauce
Instructions
Soak Barley with enough water to cover – preferably overnight.
Drain off water and add water to cover. Then add all ingredients.
Bring to a boil then simmer over medium low heat for 90 minutes. Soup may be very thick – adjust by adding more broth if desired.

Makes 4 to 6 servings

Keep in the refrigerator.
