Curried Pumpkin Soup

Perfect Autumn Soup!
Hint: Also delicious cold!"


1/4 cup butter
1 cup onion, chopped
1 clove garlic, crushed
1/2 tsp curry powder, regular
1/2 tsp curry powder, hot
1/4 tsp. coriander
1/2 tsp salt
1/8 tsp crushed red pepper
3 cups chicken broth or bouillon (If you need this to be vegetarian, vegetable broth may also be used)
1 3/4 cups canned pumpkin
1 cup Half and Half
Sour cream for serving


In a large saucepan melt butter and saute onion and garlic until soft. Add curry powders, coriander, salt,and red pepper and cook for 1 minute. Add broth; boil gently. uncovered for 15 or 20 minutes. Stir in pumpkin and Half and Half; cook 5 minutes. Pour into a blender or use an immersion blender to blend until creamy. Serve warm or reheat to desired temperature. Garnish with a dollop of sour cream, if desired.
