Creamy Tomato BasilUser Submitted Recipe
2 cans chopped tomatoes (28 oz. total)
1 cup heavy cream
1/4 teaspoon lemon juice
2 tablespoons cup extra virgin olive oil
1 medium carrot
1 small sweet onion
1 clove of garlic
2 tablespoons butter
1/3 cup freshly chopped basil
Salt & pepper (optional)
Strain, but keep juice for later, and sauté 2 cans of diced tomatoes in large pan. You will be adding liquids shortly, so make sure pan is large enough. Add 1/4 teaspoon of lemon juice, salt and pepper to taste. Add heavy cream
In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add diced carrots and fresh minced garlic. Once carrots soften a bit add diced onions until caramelized at which point carrots should be tender approximately 5 minutes. Add 1 tablespoon of butter. Once melted add the tomatoes and cream sauce, basil and the tomato juice you set aside earlier. Let simmer and set for about 15 minutes and then puree mixture and serve.
