Yogurt Chicken Noodle Soup

Creamy, healthy variation of an old standard."


3 cups plain yogurt
1 egg, beaten
3 cups chicken broth
1 cup small egg noodles
1/4 tsp salt
3 Tbs butter
1 small onion, diced


Blend yogurt and egg in saucepan. Heat slowly to boil while stirring. Stir in chicken broth, noodles and salt. Return to boil, then reduce heat and simmer until noodles are tender, about 10 minutes. In separate pan, melt butter and saute onion until golden. Add to soup and serve.
