Chicken Vegetable Soup

Chicken Vegetable Soup

2 bone –in chicken breasts, sauté until browned
2-4 cups water or chicken stock
1 onion, chopped
2 stalks of celery, chopped
2 carrots, chopped
2 large potatoes
4 chicken bouillon cubes
Parsley, garlic powder, salt and pepper to season to taste
Tabasco, season to taste


Sauté the chicken until browned, cool, cut into bite size pieces, or shred to desired size. Place water or chicken broth in stock pot with chopped onion, celery, and carrots. Add the bouillon cubes and chicken. Season to taste with salt, pepper, garlic powder and chopped fresh parsley or dried parsley. Simmer for 45-60 minutes. Add potatoes, which have been cubed into bite size pieces and continue to simmer for 20 minutes until soft. Add a bag of Green Giant mixed vegetables and cook until thawed and soft. Add Tabasco for a little zing of flavor. Serve with crackers or bread and small salad.
