Cheeseburger Potato SoupUser Submitted Recipe
In 1 large pan:
4 cups water or enough to cover veggies entirely
4 cups peeled , cubed potatoes
3/4 cup peeled, sliced carrots
1 cup celery sliced
3/4 cup diced onion
In 2nd pan:
1/2 cup butter
1/2 cup flour
2 cups milk
2 cups cubed Velveeta cheese
1 can Fiesta Cheese soup
1 lb. browned ground chuck
Boil veggies in water about 20 minutes or until tender. Do not drain.
While those boil, in pan #2 melt butter, add flour, stir until smooth. Stir in milk, stir constantly until it thickens. Add Velveeta, stir until all is melted, add Fiesta Cheese Soup. Pour into big pan, add chuck, stir.
Season with all your favorite seasonings, Salt, pepper, garlic powder etc.
Mash slightly for a creamier soup if desired.
