Pumpkin SoupUser Submitted Recipe
1/4 Cup butter
1 cup minced onion
1 clove crushed garlic
1/2 tsp. salt
1/2 tsp ground coriander
1/2 tsp crushed red pepper
3 cups chicken broth
1 cup half & half cream
2 cups pumpkin, solid pack or freshly cooked and mashed
In large pan, melt butter, saute onion and garlic until soft. Add spices. Cook & stir for one minute. Add broth. Boil on low for 15 minutes. Stir in pumpkin. Blend mixture slowly, add cream. Warm on low for 3 - 5 minutes.
