Healthy White Chili

White Chili


2 lbs Ground Turkey or chicken Thigh
1 medium onion Chopped
1 bell pepper
2 stalks Celery with leafy tops
3 garlic cloves (chopped)
3 Tbsp Cumin seeds(freshly ground)
2 cans white beans
1 can artichoke hearts
chicken broth (1 quart)
salt and pepper to taste


Saute ground cumin in 2 Tbsp olive oil for 2 min then saute all chopped vegetables followed by ground turkey. Add broth and beans (puree one can of beans before adding). Add chopped artichoke hearts and season with salt/pepper to taste. Simmer on low heat for 30 min.
