Chilled Avocado & Yogurt Soup with Jumbo Lump Crab

Cook Time: Served Chilled

This summer soup is nicely paired with a Pinot Gris."


3 Scallions
1/4 oz. Fresh Cilantro Leaves
1/4 Clove Garlic
1 Tsp. Lemon Juice
1 Tsp. Orange Juice
1 Ripe Avocado
1-3/4 Cup Chicken Stock
Salt & Pepper To Taste
1/2 Cup Greek Yogurt
2-1/2 Oz. Jumbo Lump For Garnish


Put the first seven ingredients in a blender. Blend till smooth and strain.

Add yogurt and stir well. Season with salt & pepper.

Chill until ready to serve.

Garnish with jumbo lump crabmeat and cilantro leaves.
