My "1can of" Soup

We like minestrone, but I didn't always have what some recipes called for so I figured this one out for my self. Change the "cans of Vegetables" to suit your family. All cans are undrained. "


1 can of each:, Corn, Green Beans, Green Peas, Dry Beans-kidney, red or black, Diced tomato, tomato sauce, beef broth, 1 med. potato diced
1 med onion diced
4 cloves garlic
1 med carrot chopped
2 ribs celery-chopped.
Meat-- this is not necessary but if you have some left over beef it will add flavor, ground beef cooked is good also.


Put the raw veggies in the bottom of a large crock pot then add the rest. Set on low and cook until the evening meal. I use no salt vegetables but that is not necessary. This makes a lot and can be reheated during the week. If you are in a hurry cook the raw veggies first and then add.
