Oyster Bisque

Creamy oyster soup"


1 pt oysters with liquid
1 stalk celery finely chopped
1 small finely onion chopped
1 small Cheyenne pepper finely chopped
1 stick butter
1 pt half and half
1/2 pt heavy cream
1/2 cup sherry


Melt butter in large sauce pan, and add celery peppers and onions. Sauté until tender. Add oysters and liquid cook 3 minutes on medium heat. Stir in sherry cook 3 minutes on low heat. Add half and half and heavy cream, blend in with spoon and heat through. Do not boil. Add salt and pepper to taste. Serve with oyster crackers.
