Twice baked potato soupUser Submitted Recipe
3 bacon strips
1 small onion
2 garlic clove minced
3 Tbsp flour
1 tsp salt
1 tsp basil
Black pepper to taste
3 cups chicken broth
2 large potatoes baked and peeled and cubed[microwave and cook while the soup is getting ready]
1 cup half and half
Hot pepper sauce to taste
Minced fresh parsley
In a large sauce pan cook bacon until crisp; Drain reserving one table spoon drippings.
Sauté onion and garlic in drippings until tender; stir in flour, salt, basil and pepper. Mix well.
Gradually add broth and bring to a boil, stir for 2 min
Add potatoes, half and half and hot pepper sauce.
Heat through but do not boil. Garnish with bacon; parsley...
