Zucchini Pie with Pancetta

Unique and tasty side dishes.... use a mini muffin pan instead and they'll work great as an appetizer!




1 frozen pie crust 3 cups zucchini 2 shallots chopped finely 4 oz. pancetta 1 cup shredded mozzarella 2 eggs 2 tablespoon chopped parsley 1 cup milk ½ cup heavy cream

Heat oven to 350 degrees. Place thawed pie crust into pie plate. Chop pancetta into ¼" pieces and fry in a tablespoon of olive oil until golden brown. Remove from pan to drain and cool. Place chopped shallot into pan and fry in remaining oil. Slice zucchini in half. Peel and chop into ¼" thick slices. Add zucchini to pan. Cook until limp. Remove and let cool. Beat eggs in a bowl. Add milk, cream, parsley, mozzarella, pancetta and zucchini. Pour into pie pan and bake approximately 30 minutes or until firm and golden brown.
