The White Rice function makes light and fluffy couscous. Mediterranean flavors are at the forefront of this dish and go well with steamed fish.

Ingredients

  • 4 cooker cups plain or whole wheat couscous (not instant)
  • 3 cups water
  • ½ teaspoon sea salt, divided
  • 2 1⁄3 cups chopped zucchini (about 2 small to medium zucchini)
  • ¼ cup chopped fresh mint
  • 2 teaspoons fresh lemon zest
  • ⅓ cup chopped fresh parsley
  • ¼ teaspoon freshly ground black pepper
  • 1⁄3 cup extra virgin olive oil

Preparation

  1. Put the couscous, water and a pinch of salt in the cooking pot of the Cuisinart® Rice Plus™ Multi-Cooker. Select the White Rice function and press Start.
  2. Once the audible tone has sounded to indicate the end of cooking, open the lid and add the remaining ingredients; toss to combine.
  3. Adjust seasonings and serve immediately.
