Thanksgiving Gelatin Salad

This is a delicious gelatin version of the apple, orange, cranberry relish which even children enjoy.




1) 1 large package of cranberry gelatin or two small packages 2)1 cup washed cranberries, chopped 3) 1 medium Fiji apples cut into small cubes 4) ¼ cup chopped pecans 5) 1 teaspoon ground cinnamon 6) 1 small naval orange, put through a food grinder 7) 2 cups cold apple juice

Prepare gelatin according to package directions substituting 2 cups cold apple juice for the cold water. Add teaspoon of ground cinnamon, stir well and refrigerate until partially set. Wash and chop raw cranberries. Wash and chop Fiji apple, grind orange including the peel. When gelatin is partially set add fruits with chopped pecans and combine thoroughly. Place in oiled ring mold or any desired mold. Cover with plastic wrap and refrigerate until firm. When ready to serve, unmold onto plate covered with green lettuce leaves. Garnish with whole cranberries. Note: Using a baking spray makes it easy to unmold.
