1½T Shallots, Sliced Thin
2T Chopped Fresh Tarragon
Fresh Ground Sea Salt, about 7 turns of the mill

Over medium high heat, saute carrots in the olive oil & butter for about 5 minutes. Add the shallots, salt & pepper and continue to cook for 2-3 minutes stirring constantly until carrots are the desired firmness. Add the tarragon and stir until well distributed, serve immediately.
