Tarragon Carrots

1# Carrots peeled & then sliced with the #10 blade in your Cuisinart food processor. 1T Olive Oil 1T Butter 1½T Shallots, Sliced Thin 2T Chopped Fresh Tarragon Fresh Ground Sea Salt, about 7 turns of the mill Pepper to taste

Over medium high heat, saute carrots in the olive oil & butter for about 5 minutes. Add the shallots, salt & pepper and continue to cook for 2-3 minutes stirring constantly until carrots are the desired firmness. Add the tarragon and stir until well distributed, serve immediately.
