This recipe is great for entertaining. In addition, it is easily halved for a smaller yield.
Makes about 7 cups
1cooker cup bulgur wheat
4cups fresh parsley, chopped
½cup fresh mint, chopped
4cups halved grape or cherry tomatoes
¼cup extra virgin olive oil
½cup fresh lemon juice
¼teaspoon sea salt
¼teaspoon freshly ground black pepper
pinch ground cumin

Put the bulgur and water in the cooking pot of the Cuisinart® Rice Plus™ Multi-Cooker. Select the Brown Rice function and press Start. Once the audible tone has sounded to indicate the end of cooking, open the lid and add the remaining ingredients; toss to combine. Adjust seasonings and serve immediately.
