Sweet, creamy, savory potato side dish.
6 large baking potatoes,
Extra Virgin Olive Oil,
1 tsp Parsely Flakes,
1 tsp Red Pepper Flakes,
2 - 8 oz container Blackberry Fruit on the Bottom Lite Greek Yogurt,
Preheat oven to 350 degrees. Wash potatoes. Cut into 1" diced pieces. Add potatoes to large bowl and coat lightly with EVOO. Add the spices and stir in well. Spread potatoes out on a baking sheet. Lightly salt the potatoes. Bake for 30 minutes or golden brown. Remove from oven and cool for five minutes. After cooling, place potatoes in a bowl and add yogurt. Stir well. Move the potatoe mixture to a casserole dish. Sprinkle with sesame seeds and serve.
