Ingredients
1½ pounds sweet potatoes, peeled and cut into ¼-inch slices2 tablespoons unsalted butter, melted½ teaspoon herbes de Provence, divided½ teaspoon kosher salt¼ teaspoon freshly ground peppercooking spray1 red-skinned apple, skin on, cored and cut into ¼-inch slices1 small onion, peeled, quartered and cut into ¼-inch slices½cup vegetable or chicken stock
Preparation
In a large bowl, toss potatoes with melted butter; season with herbes de Provence, salt and pepper. Combine apple and onion in another bowl.Lightly coat the interior of ceramic pot of the Cuisinart® Slow Cooker with cooking spray. Using ¹∕³ of the potatoes, make a single layer around the bottom of the slow cooker. Top with ½ of the apple and onion mixture. Make a second layer with ¹∕³ of the potatoes; top with remaining apples and onions. Finish with remaining potatoes. Pour stock over casserole.Cover and press the on/off button to turn the unit on. Set time to 5 hours and press Low. Slow cooker will automatically switch to Warm until ready to serve.
