Sweet Potato Souffle

2 cups mashed sweet potatoes. ¾ cup hot milk 3 tablespoon. butter or margarine. ¼ teaspoon. salt. ¼ teaspoon. ground allspice. ¼ teaspoon. finely crushed cardamom seed 2 tablespoon. sugar 2 eggs separated.

Combine the first seven ingredients. Beat egg yolks well and beat into the potato mixture. Whip egg whites until they stand in soft peaks. Gradually beat in the remaining 2 tablespoon. sugar Carefully fold into the potatoes. Turn into an ungreased 2 quart casserole. Bake in a preheated, moderate oven (350 degrees) 1 hr. or until firm in center.
