This is a perfect vegetable dish for Thanksgiving or any fall comfort meal. It is loaded with color, very inviting, absolutely delicious, and demands recipe requests from all that taste it!
One 2lb. can of yams or sweet potato
2 well beaten egg yolks
2 egg whites beaten until fluffy
2 T butter
¾ t salt
¾ cup whole milk
1 cup Pecan Halves
½ cup brown sugar
1 box frozen fordhook lima beans

Drain and mash sweet potatoes in your Cuisinart Mixer.
Thoroughly blend in beaten egg yolks, butter salt and milk.
Fold in beaten egg whites.
Butter the ring mold and place pecan halves around the bottom, which will be the top after baking and inverting.
Sprinkle pecan halves with brown sugar.
Cover with the sweet potato mixture.
Bake @ 350 degrees, uncovered for 45 minutes.
When done, place plate over the top of the ring mold and invert allowing it to sit with the mold on for 5 minutes then, lift the mold.
Fill with cooked and buttered lima beans or your favorite green vegetable.
