1 pie crust
1 large can sweet potatoes, drained
½ cup orange juice
1 teaspoon cinnamon
1 teaspoon nutmeg
2 eggs, beaten

Prepare homemade crust or use frozen crust. Bake 10 minutes. While crust is baking, mash sweet potatoes (can do in the processor), add remaining ingredients and mix well. Pour into prepared pie crust. Bake in 350 degree oven for 45 minutes.
Filling good for 1 10" or 2 8" pies. Can also be made in 8 x 10 casserole dish.
