Sweet Potato Casserole


3 cups cooked mashed sweet potatoes 1 teaspoon salt 1/2 cup sugar 1/3 cup butter 2 eggs 1/3 cup milk 1/2 teaspoon vanilla ~~~ 1 cup light brown sugar 1/4 cup flour 1/4 cup oatmeal 1 cup chopped pecans 1/2 cup butter (softened)

1. Place the sweet potatoes and 1 teaspoon salt in an 8-quart pot and fill it with enough water to cover the potatoes. Bring the water to a gentle boil and cook the potatoes until they are tender. Drain the potatoes, return them to the pot, and stir over medium heat for 1 minute to dry the potatoes. 2. Mash the sweet potatoes and blend in next 5 ingredients. Pour into lightly buttered casserole. 3. Mix the brown sugar with the remaining ingredients and spoon on top of sweet potatoes. 4. Bake at 350° in preheated oven for 25-30 minutes.
