An unusual bean dish that pleases everyone. Found in an old Wyoming cookbook.
1 Cup chopped onion
2 medium peeled apples,chopped
2 green peppers,seeded and chopped
6 slices bacon, cooked and crumbled
3 tsp. curry powder
4 (1 lb) cans red kidney beans,drained and washed
2 (1 lb) cans whole tomatoes, half the liquid reserved
2 cups dark brown sugar

Saute onions, apples and peppers (in the reserved bacon fat) until soft. Combine with curry, beans, tomatoes, reserved tomato liquid and sugar. Place in 3 quart casserole and top with cheese. Bake at 350 degrees for one hour.
