Summer's Best

This vegetable dish is quick and easy to serve with any meat that you might throw on the grill on those long hot summer evenings.




2 cup zucchini 2cups yellow squash 1 green pepper 1 large onion 1 clove garlic 2 tbs capers 1 tbs olive oil ½ cup diced ham 1 egg- whisked ½ cup water 1 cup salsa salt and pepper to taste

1. Dice zucchini, yellow squash, pepper, onion and garlic. Place in a large skillet with water over medium heat for 12 to 15 minutes or until soft but firm. At this point most of the water should have evaporated. 2. Add olive oil, capers, salt, pepper, and diced ham and continue to cook for 5 more minutes 3. Stir in whisked egg and continue to cook until egg is firm and set. App 2-3 minutes 4. Place on serving tray and cover with salsa
