This simple healthy dish is delicious served with steamed jasmine rice

Ingredients
2cups baby bok choy, cut into quarters
1cup red bell pepper, cut into strips (about 1 medium red bell pepper)
¼cup chopped scallion
1cup eggplant, cut into 1” cubes (about ½ small eggplant)
1cup carrots, cut into ¼ ” coins
1cup shitake mushrooms, sliced
1cup broccoli florets
2garlic cloves, sliced
2tablespoons soy sauce
2tablespoons chicken stock
½teaspoon crushed red pepper
½teaspoon freshly ground black pepper
