This is the perfect salad for Halloween because of the orange color, and what it better for this holiday than "mold"?
1 15-ounce can mandarin oranges
1¾ cups liquid (from oranges & water)
¼ teaspoon salt
6 inches of stick cinnamon
½ teaspoon whole cloves
2 3-ounce pkgs. orange gelatin
1¾ cups cold water
3 Tablespoons lemon juice
½ teaspoon orange flavoring
½ cup chopped English walnuts
Can use sugar-free gelatin to reduce Calories
Drain the oranges, reserving the syrup. Add enough water to the syrup to make 1¾ cups. Pour this syrup mixture into a saucepan and add the salt and spices. Cover and simmer for 10 minutes. Remove from the heat and let stand another ten minutes, covered, to steep. Strain spiced liquid into large mixing bowl. Dissolve the gelatin this hot mixture. Stir in the cold water, lemon juice and orange flavoring to the gelatin mixture. Chill until partially set. Stir in the orange sections and nuts and pour into a large (4 qt.) mold and refrigerate until completely set.
