A light and tasty seafood macaroni salad.
Ingredients
2 cups small macaroni shells
8 oz imitation crab meat
¼ cup green bell pepper finely chopped
¼ cup yellow bell pepper finely chopped
¼ cup red bell pepper finely chopped
¼ cup mild onion finely chopped
1 garlic clove grated
½ to ⅔ cup Mayonnaise - according to taste
¼ cup sour cream
¼ cup grated Parmesan cheese
½ to 1 teaspoon Dijon mustard - according to taste
1 tablespoon lemon juice
¼ old bay seasoning

Instructions
Cook macaroni according to package and drain.
Add pepper(s), onion and imitation crab meat. Mix well
In a separate bowl mix mayo, sour cream, lemon juice, Parmesan cheese, Dijon mustard, old bay seasoning, and grated garlic. Mix well.
Add salt & pepper to taste.
Cool thoroughly and enjoy.
